This Pancake Day it’s time to do away with the traditional, plain recipes and indulge in something a little more luxurious.
High Street TV is offering some inspiration to help take Pancake Day from standard to scrumptious, with an exclusive recipe for ‘Blueberry American Pancakes with Bacon, Mushroom and Scrambled Eggs’.
The quick and easy recipe was created to be prepared in High Street TV’s QuadraPan, as the four individual cooking zones mean the entire dish can be cooked all at once (not to mention, it saves on a mountain of pans to wash up afterwards!)

Pancakes (makes 12)
Ingredients
115g self-raising flour, ½ tsp Bicarbonate soda, 25g caster sugar, 1 large egg
½ tsp vanilla extract, 125ml 0% Greek Style yogurt, 75ml milk, 100g blueberries
Other Ingredients
4 rashers streaky bacon, 75g mini portabella mushrooms or chestnut mushrooms
Fresh thyme leaves, 15g butter, 2 large eggs, 2 tbsp milk, Seasoning
QUADRAPAN RECIPE
Blueberry American Pancakes with Bacon, Mushrooms and Scrambled Egg
Method:
1. Sift the flour and bicarbonate soda into a large bowl and stir in the sugar.
2. In a medium bowl whisk together the egg, vanilla extract, yogurt and milk.
3. Make a well in the centre of the flour and pour in the liquid, beat together with a balloon whisk to make a smooth batter, stir in half the blueberries.
4. Heat the pan over a medium high heat for 1 minute, place the 4 rashers of bacon into the meat section of the pan and drop 2 tablespoons of the pancake batter into each of the 3 sections to cook 6 pancakes, adding extra blueberries if not in the batter.
5. Cook until bubbles appear, this takes about 2 minutes. Flip the pancake over with a slice or palette knife to cook the other side until it is golden brown.
6. Lift pancakes onto a cooling rack that is covered with kitchen towel and place more kitchen towel lightly on the top. Repeat cooking pancakes in 2 sections and adding the mushrooms to the fish section with 2 tsp water and a sprinkle of fresh thyme leaves. Turn the bacon.
7. Remove pancakes and cook the remaining batter in the egg section.
8. Melt the butter in the middle section of the pan. Beat the 2 eggs together with the milk and seasoning in a small bowl. Remove pan from heat and add the eggs to the middle section of the pan, stir around to scramble, place the pan back on the heat to finish cooking the scrambled egg.
9. Serve
