Paxton & Whitfield’s Cheese of the Month for December: Mont D’Or

Mont D’Or comes from the Jura Mountains, which lie across the Alps of the French/Swiss border. It is a unique cheese as it is only made from mid-August to mid-March. This is because the weather conditions during these months traditionally prevented farms taking their milk to the local dairy for making Comté, as they would in summer. The farms therefore make a smaller cheese themselves and, because a small size is not particularly good for a hard cheese, they make a delicious soft cheese that is rich and creamy in flavour.

Approximately seven litres of milk are needed to create one kilogram of the cheese. Once made the curds are pressed into cylindrical moulds, they are then taken out of the moulds and the cheese is circled with a strip of resinous spruce bark, a unique feature of this cheese is that the wood imparts a distinct flavour to it.

The PDO* status of the cheese means that it can only be made from the raw milk of Montbeliarde or French Simmental cows, produced between the 15th August and 15th March and at an altitude of 700m.

The cheese has a slightly woody flavour with hint of mushroom and a rich creamy taste. It can be eaten at room temperature with a spoon used to scoop out the rich pate.

James says: “I love to bake a whole Mont D’Or in the oven and once it is ready enjoy it with some boiled new potatoes. I dip the potatoes into the melted cheese, it’s like having your own little fondue! The perfect thing to complement this is some of our Sweet Cucumber Pickle (£5.45/198g). The fresh, piquant flavour of the pickle is delicious with the cheese.”

* PDO – Protected Designation of Origin, for products that are produced, processed and prepared within a particular geographical area, and with features and characteristics that must be due to that area.

Even Santa is in awe of the amazing NHS staff and volunteers working tirelessly to keep us safe according to a new film released today to help raise more vital funds for the NHS Charities Together Covid Appeal.

The film starts with an elderly man being rushed into hospital. We then see his journey back to health. He experiences and observes the brilliant, selfless care of the NHS staff. In particular one hero nurse who is there with him every step of the way. He makes a full recovery and is let home just in time for the Big Day. On Christmas Day itself our hero nurse receives a present from Santa and at that point it dawns – “Was the patient I’ve nursed back to health actually Santa?”

The film, made with guidance from NHS professionals, is part of a wider campaign encouraging the public to buy gifts that give back to those who have given everything, in recognition of the amazing commitment of NHS staff during the Covid crisis.

The proceeds will go to NHS charities across the UK this Christmas so they can provide more much-needed support to NHS staff, volunteers and patients.

British singer songwriter, Birdy, recorded an exclusive version of her 2011 track ‘People help the people’ especially for the campaign. The song was performed and recorded acoustically on her piano at home during lockdown.

Announcing the campaign and film launch, Ellie Orton, CEO of NHS Charities Together, said:

“Hundreds of thousands of NHS staff will be working over Christmas and New Year. They do it every year but this time they’re also having to deal with probably the biggest challenge our health service has ever faced.

“I’m thrilled and so grateful that we have been able to partner with these brands to do something about that and show how much the UK cares about those NHS staff and volunteers and the patients they are looking after.

“The public has responded magnificently so far to our appeal, helping us raise over £150m. But with the ongoing impact of Covid, the need is still there.

“So, if you’re buying pressies, think about buying one from this campaign. You’ll be giving back to the people who have given everything for us this year.”

The money raised by the campaign will be distributed to NHS charities across the UK who will use it to provide whatever support will make the biggest difference for the staff, volunteers and patients. That could include providing hot meals and a place to rest for staff working long hours and specialised psychological support for those struggling with stress, trauma and separation from their loved ones. The funds will also to go to help vital partnerships outside hospitals, such as hospices, community healthcare and social care so they can provide care to patients, volunteers and staff outside of hospital

Local NHS charities are also providing additional support where it is most needed by NHS staff, volunteers and patients in their area, with a focus on support for people who are disproportionately affected by the Covid crisis, such as patients and staff from BAME communities and high-risk groups like those living with disabilities.

In the longer term the money raised will also fund programmes to help staff and families recover fully once the crisis has abated, reducing the long-term impact on them and the people they care about.

Set in her native Black Country, with snow whirling around the high rises, there’s a plaster-cast Mary for the nativity scene, and Christmas toys and bikes being wrapped for the big day…

Liz Berry was born in the Black Country and now lives in Birmingham. Her first book of poems, Black Country (Chatto 2014), described as a ‘sooty, soaring hymn to her native West Midlands’ (Guardian) was a Poetry Book Society Recommendation, received a Somerset Maugham Award and won the Geoffrey Faber Memorial Award and Forward Prize for Best First Collection 2014. Liz’s pamphlet The Republic of Motherhood (Chatto, 2018) was a Poetry Book Society Pamphlet Choice and the title poem won the Forward Prize for Best Single Poem 2018. A new book of her collaboration with Black Country photographer Tom Hicks will be published by Hercules Editions in 2021. Liz is a patron of Writing West Midlands and works as a tutor for organizations including the Arvon Foundation and The Poetry School.

In February 2020 Abbey Road studios welcomed each of the 10 poets to record pieces from their collections. Then lock down hit….

But remotely and with the additional help of field recordists and musicians around the world, Cerys and Joe Acheson (Hidden Orchestra) created a sound journey for these poems with the theme of: Genesis: Birth, heritage, a journey about to begin.

Cerys says; “I’ve always been in awe of the power of a great turn of phrase; in poems, songs and prose. There are some exceptional poems being added to the world right now.

So I invited poets whose work I admired and had championed for years to join me in this project. I selected poems which worked across and with each other to become a journey, an aural adventure.

I’m hoping it’ll be the first in a series of ‘poem song’ albums on Decca, with life on earth as inspiration. As simple and complex as that.

The theme for this then, as the first, had to begin at the beginning: Genesis”.

HALF OF BRITS PLAN TO ORDER TAKEAWAY ON CHRISTMAS DAY

ONE IN FOUR PEOPLE SAY THEY ARE BORED OF THE SAME TRADITIONAL CHRISTMAS DINNER

Almost half of the UK plans to order a takeaway meal on Christmas Day, according to new research.

With the year drawing to a close and the countdown to Christmas officially beginning, the excitement is starting to fill the air. As people are planning their Christmas shopping, decorating their homes and prepping the kitchen ready for the traditional turkey with all the trimmings, not everyone is looking forward to that delicious dinner.

In fact, one in four Brits have said they are bored of the same traditional Christmas dinner on Christmas Day, according to new research published by food delivery app Foodhub.

Almost half (49%) of the 2,000 Brits polled plan to order a takeaway on Christmas Day. Four in 10 claim this will save preparation time and 35% say it will save time on the washing up.

When it comes to the UK’s favourite festive takeaway food ordered on Christmas Day, Indian takeaway is ranked top (42%) followed narrowly behind by Chinese (39%) and then Pizza (28%).

To reflect this, Foodhub has now produced a limited edition festive-flavoured musical pizza-box that plays a special seasonal Christmas jingle when the lid is opened. Anyone who orders a pizza from Foodhub over the Christmas period stands a chance of having their pizza delivered in one of the special musical boxes.

Wil Chung, Foodhub spokesman, said: “We produced our Christmas-themed musical pizza boxes to reflect not only one of the favourite Christmas Day takeaway options but also to help put a seasonal smile on our customers faces. It’s been a difficult year for everyone and we wanted to do something that would help get people in a festive mood.

“It is no surprise that, after such a difficult 12 months, more people are turning to takeaway food this year either – the average household spends over six hours cooking and preparing the Christmas dinner, according to our data, with 30% spending between four to five hours and a further 20% spending two to three hours preparing the main Christmas Day meal.”

Hosting a festive feast for the entire family isn’t cheap, as the average household spends £75 on food and drink for Christmas day, with 15% spending up to £50 and 10% splashing the cash on £150 worth of tasty treats.

Wil Chung added: “As more and more people are becoming bored of the traditional Christmas dinner, we’re noticing an increase in takeaway orders. Cooking and preparing a dinner for your loved ones can be a stressful affair, especially on the busiest day of the year. So, it comes as no surprise that more people are turning to takeaways to save the time and stress that comes with a traditional turkey and all the trimmings.

“With the average household spending up to £75 on their festive feast, Foodhub are here to bring the cost of eating way down. Unlike our competitors, we don’t charge takeaway/restaurants commission fees, which makes it cheaper for them and for you, as they can offer better prices then the likes of Just Eat, Uber Eats and Deliveroo.”

The new survey data shows millennials are the most likely group to order a takeaway on Christmas Day (17%) compared to those over 45 (7%), and pizza is their preferred choice (45%). They are also prone to ordering a takeaway as a late in the day meal or supper (36%).

So, which area of the UK fancies a change this Christmas?

People across the West Midlands are the most bored of the traditional Christmas dinner (16%) compared to the rest of the country, 66% of people in Wolverhampton claimed they are bored of the tradition, whereas people in Aberdeen would prefer to order a takeaway as it’ll save on washing up (55%).

Nearly half of Glasgow would consider ordering a takeaway on the holiday (47%), compared to just 11% of people in Portsmouth.

When it comes to who spends the longest amount of time preparing the Christmas feast, a whopping seven hours are spent by people in Swansea compared to just five hours in Aberystwyth.

Wil Chung added: “Our survey showed some distinct regional variations on our takeaway ordering habits. For instance, the region of Yorkshire has ordered a takeaway meal multiple times more than the rest of the nation.

“People in Coventry would be prepared to spend the most on a takeaway over Christmas (£54) compared to people in Gloucester who would spend just £20.”

Foodhub is also planning to give away a number of these festive musical pizza boxes plus other Foodhub surprises to customers in a special Christmas competition due to be launched on its Facebook page in the next week.

Whilst people might not be spending as much time indoors now the new tier restrictions allow some areas to socialise, that doesn’t mean people have stopped taking care of their households.
