Celebrate Margarita Day with a Rooster Rojo cocktail

When life hands you limes, make a Margarita cocktail. Happily, it’s Margarita Day on 22 February 2023 and we have a superb riff on the classic using premium Mexican Rooster Rojo Tequila.

Rooster Rojo is the one featuring a cockerel on the bottle so when you think ‘cock-tail’ you’ll remember the tequila featuring the red rooster (‘rojo’ means ‘red’ in Spanish).
There’s often mystique surrounding the Margarita, so here are some quick tips and tricks to demystify this classic drink.

Firstly, choosing an authentic tequila makes a big difference. Rooster Rojo is the one many bartenders around the world choose so you can bring bartenders’ skills into your home. Secondly, a classic Margarita is a simple 3-2-1 formula – that’s all you need to remember. Use three parts tequila; two parts good triple sec (a mandarin or orange liqueur); and one part lime juice. Simple.
And finally, because this classic drink is so simple, there’s nowhere for poor ingredients to hide. We recommend a Reposado expression as this gives a smooth and delicious taste to your Margaritas.

The Rooster Rojo Cucumber and Jalapeno Margarita
Ingredients
40ml Rooster Rojo Reposado
5ml Agave syrup
10 ml De Kuyper Mandarine Napoleon Liqueur
25ml Lime juice
20ml Cucumber syrup*
1 piece of Jalapeno pepper
Method
*First prepare your cucumber syrup. Blend a whole cucumber and strain off 200ml of liquid. Combine with 150ml of caster sugar and keep covered, stirring from time to time over a 24-hour period.
Chill and half rim your margarita glass with a mix of pink salt, black pepper, and grated lime zest. Add all ingredients to a shaker with ice and shake until chilled. Double strain into the glass and decorate with olive oil leaf, edible flowers and perhaps a Jalapeno pepper.
