This is a highland single malt matured, as the name suggests, in former Pedro Ximénez sherry barriques for six years. The casks have delivered a lively sweet sherried dram. We purchased the casks for this bottling directly from a bodega in Spain and filled them at a distillery in Perthshire in 2017.
