They are gluten free and full of veggie goodness including iron and vitamin B12. Customise these by adding your favourite cheese on top or adding different herbs.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2021\/02\/cc1.jpg\"><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n100g chickpea flour (gram flour)<br \/>\n300ml water<br \/>\n2 tsps Green Boost<br \/>\n4 eggs<br \/>\nCoconut oil, for frying<br \/>\n40g grated hard cheese (cheddar or<br \/>\nparmesan)<br \/>\nSliced red onion<br \/>\n1 tbsp hot sauce<br \/>\nHandful of parsley<\/p>\n<p><strong>Method<\/strong><br \/>\nWhisk together the chickpea flour, 2 of the eggs, water, salt and Green Boost.<br \/>\nLeave to rest for about 1 hour in the fridge.<br \/>\nHeat coconut oil in a non-stick pan on medium heat. Add half of the batter and tilt the pan around to make sure it is evenly distributed. Wait until bubble start appearing on the top of the pancake and carefully loosen the sides with a spatula before flipping the pancake. Cook for a further 2 minutes until both sides are golden then slide onto a plate. Fry the remaining the pancakes.<br \/>\nMeanwhile, fry the eggs in some more coconut oil. Not only do they look amazing but they taste incredible too. A sprinkle of Superberries in the batter adds a burst of colour and berry flavour.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2021\/02\/cc3.jpg\"><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n125g plain flour<br \/>\n2 tsps baking powder<br \/>\n\u00bc tsp salt<br \/>\n2 tbsp melted butter<br \/>\n1 \u00bd tsps Superberries<br \/>\n1 tbp maple syrup or coconut sugar<br \/>\n1 large egg<br \/>\n175ml of milk<br \/>\n3 tablespoons raspberries, fresh or<br \/>\nthawed from frozen, mash<br \/>\n\u00bd tsp vinegar<\/p>\n<p><strong>Method<\/strong><br \/>\nCombine the flour, baking powder, and salt in a large bowl. Whisk together and then add the melted butter, maple syrup\/sugar, and egg.<br \/>\nDivide the mixture into three bowls. The first bowl will stay plain. Into the second bowl add a heaped tablespoon of the raspberries and 1 tsp of Superberries. Add the remaining raspberries and Superberries to the third bowl.<\/p>\n<p>Into the first bowl with plain batter, add 85ml of milk and mix until just combined.<\/p>\n<p>Don&#8217;t overmix. The mixture should be thick but pourable.<br \/>\nInto the second bowl, add 50ml of milk mixed with \u00bc teaspoon of vinegar (this<br \/>\nhelps the pink colour to stay vibrant) and gently mix together until just combined.<br \/>\nAdd 40ml of milk mixed with \u00bc teaspoon vinegar to the third bowl.<br \/>\nHeat a non-stick pan over a medium heat and add a bit of butter. Once melted, use a ladle to pour the batter into the pan. Each bowl makes 2 pancakes. Flip when bubbles begin to appear on the surface of the pancake.<br \/>\nTo serve, stack pancakes by colour and top with fresh berries and maple syrup.<\/p>\n<p><strong>Pear Pancakes<\/strong><br \/>\n<strong>Recipe by Maxine Ali<\/strong><br \/>\nServes 1<br \/>\n20 minutes (plus overnight)<br \/>\nThis recipe is egg-free and vegan, as well as being totally yummy! Serve these pancakes with your favourite nut butter for a hearty weekend breakfast.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2021\/02\/cc4.jpg\"><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n75 grams buckwheat flour<br \/>\n2 heaped tablespoons of oats<br \/>\n1 tablespoon of brown rice flour<br \/>\n75 grams of almond milk<br \/>\n2 pears<br \/>\n1 teaspoon ground cinnamon<br \/>\n1 tablespoon of Bioglan Superfoods Chia +<br \/>\nFlax mixed with 3 tablespoons of water,<br \/>\nallowed to rest for 20 minutes \u2013 8 hours<br \/>\n(the longer the better)<\/p>\n<p><strong>Method<\/strong><br \/>\nPrepare your Chia + Flax and water mixture and place these aside until<br \/>\nready.<br \/>\nWhen ready, simply place the oats, buckwheat and brown rice flour,<br \/>\nalmond milk, pears, cinnamon, baking powder, and the Chia + Flax and<br \/>\nwater mixture into a high speed blender or food processor and blend until<br \/>\na batter forms. Transfer this to a bowl.<br \/>\nHeat a frying pan on the stove-top to a medium heat, grease with a little<br \/>\ncoconut oil and pour 1\/2 a tablespoon of the mixture into the pan, using<br \/>\nthe spoon to form a circular shape. Cook until bubbles begin to form on<br \/>\nthe top of the batter, then flip and cook for another minute and a half or<br \/>\nso, until the pancake is slightly golden. Topped with vegan yoghurt, avocado and tomatoes, these pancakes are super fluffy and delicious, we love them!<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2021\/02\/cc12.jpg\"><\/p>\n<p><strong>Ingredients<\/strong><br \/>\n\u2022 200g tofu<br \/>\n\u2022 200ml coconut milk<br \/>\n\u2022 1 tsp lemon juice<br \/>\n\u2022 1 tbsp vegetable oil<br \/>\n\u2022 150g plain flour<br \/>\n\u2022 \u00bd tbsp baking powder<br \/>\n\u2022 \u00bd tbsp bicarbonate of soda<br \/>\n\u2022 1 tsp Bioglan Superfoods Beauty Protein<br \/>\n\u2022 1 tbsp vegan margarine<br \/>\n\u2022 2 tbsp vegan yogurt<br \/>\n\u2022 Optional toppings:<br \/>\n\u2022 \u00bd avocado<br \/>\n\u2022 \u00bd lime<br \/>\n\u2022 Handful of cherry tomatoes<br \/>\n\u2022 Handful of chives<\/p>\n<p><strong>Method<\/strong><br \/>\n1. Add the tofu, coconut milk, lemon juice and vegetable oil into a blender and blitz until it\u2019s a smooth but still thick.<br \/>\n2. In a mixing bowl, mix together the flour, Bioglan Superfoods Beauty Protein, baking powder and bicarbonate of soda. Add the tofu batter in the middle and mix until you have a thick batter.<br \/>\n3. Place a non-stick frying pan over a medium heat and add a small amount of vegan margarine. Once hot, use a ladle to add the pancake batter to the pan. Cook on each side or until golden and bubbly.<br \/>\n4. Stack the pancakes once they\u2019re all cooked and top with vegan yoghurt, chopped avocado, tomatoes and chives.
