Handcrafted in Cambridgeshire, a donation from the sale of each bottle also goes to www.wateraid.org. a WASH charity which changes millions of lives every year, working in 28 countries to provide clean water, decent toilets and good hygiene.<\/p>\n<p><strong>Orriss &amp; Son recipe &#8211; Picanha, Mushroom Chimichurri<\/strong><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-648091\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2021\/01\/rrr-1.jpg\" alt=\"\" width=\"615\" height=\"409\" \/><\/p>\n<p><strong>(serves 4 \/ 45 mins)<\/strong><\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<p>1kg Picanha (otherwise known as the Rump Cap, a delicious butchers cut)<br \/>\n2 lg Flat or Portobello mushrooms (peel &amp; dice)<br \/>\n500g Chestnut or Button mushrooms (remove the stalks, but leave whole if small, otherwise halve or quarter depending on the size)<br \/>\nSmall bunch of Watercress<\/p>\n<p>2 Shallots, finely chopped<br \/>\n1 tsp dried mint<br \/>\n1 tsp dried oregano<br \/>\n50ml Extra Virgin Olive Oil<br \/>\n20ml Red wine vinegar<br \/>\n50ml My Wave<br \/>\n50ml Fresh Tendrils<\/p>\n<p><strong>Method<\/strong><\/p>\n<p>Preheat the oven to 150C<br \/>\nPlace the beef in a dry pan, skin side down &amp; season the meat generously with salt<br \/>\nStart on a slow heat &amp; render the significant layer of fat, reserving any as it comes out<br \/>\nMake the Chimichurri, by mixing all the sauce ingredients together, seasoning with salt if necessary. Reserve<br \/>\nAs the fat begins to crisp up, baste the meat with the hot beef dripping<br \/>\nWhen the fat is evenly roasted, flip it over &amp; continue to colour the meat<br \/>\nWhen browned all over, place in a roasting dish, with a small amount of the fat &amp; place in the oven for 8-10 minutes<br \/>\nWith the pan you have used to brown the meat in, add the prepared mushrooms to the reserved beef fat &amp; cook on a high heat, with a pinch of salt<br \/>\nWhen the mushrooms are tender remove from the heat<br \/>\nWhen the beef comes out of the oven rest (on top of the mushrooms) for at least 8-10 minutes before carving<br \/>\nSlice the picanha thinly &amp; plate, interspersed with the mushrooms &amp; cooking juices<br \/>\nGarnish with some watercress &amp; sauce with the chimichurri.
