Try after dinner when you fancy a little something sweet, or pop one in your lunchbox to improve your day no end.<\/p>\n<p style=\"text-align: center;\">Preparation time: 25 mins<br \/>\nServes: 12<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-470086\" src=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2018\/06\/btrr.jpg\" alt=\"\" width=\"615\" height=\"734\" srcset=\"https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2018\/06\/btrr.jpg 615w, https:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2018\/06\/btrr-251x300.jpg 251w\" sizes=\"auto, (max-width: 615px) 100vw, 615px\" \/><\/p>\n<p style=\"text-align: center;\"><strong>You\u2019ll need:<\/strong><\/p>\n<p style=\"text-align: center;\">12 cupcake cases<\/p>\n<p style=\"text-align: center;\">For the cupcakes:<br \/>\n170g vacuum-packed cooked beetroot<br \/>\n2 eggs<br \/>\n140ml walnut oil<br \/>\n1 tsp vanilla essence<br \/>\n170g plain flour<br \/>\n1\u00bd tsp baking powder<br \/>\n3 tbsp cocoa powder<br \/>\nPinch of salt<br \/>\n70g soft brown sugar<br \/>\n100g golden caster sugar<br \/>\n3 tbsp chopped California walnuts<\/p>\n<p style=\"text-align: center;\">For the caramelised California walnuts:<br \/>\n60g white caster sugar<br \/>\n1 \u00bd tbsp liquid glucose<br \/>\n12 California walnut halves<\/p>\n<p style=\"text-align: center;\">For the frosting:<br \/>\n125g butter<br \/>\n125g cream cheese<br \/>\nSplash of milk<br \/>\n250g icing sugar<\/p>\n<p style=\"text-align: center;\"><strong>Method<\/strong><\/p>\n<p style=\"text-align: center;\">1. Preheat the oven to 180\u00b0C.<\/p>\n<p style=\"text-align: center;\">2. Place the beetroot, eggs, walnut oil and vanilla essence into a blender and blitz until smooth.<\/p>\n<p style=\"text-align: center;\">3. Sift together the flour, baking powder, cocoa powder, salt, brown sugar and golden caster sugar into a large bowl.<\/p>\n<p style=\"text-align: center;\">4. Mix the wet ingredients into the dry with an electric hand whisk until fully combined. Stir the California walnuts into the batter.<\/p>\n<p style=\"text-align: center;\">5. Line a 12-hole muffin tray with cupcake cases and divide the cake batter equally. Bake in the oven for 15-20 minutes or until risen and cooked through, then leave aside to cool.<\/p>\n<p style=\"text-align: center;\">6. Place the white caster sugar and liquid glucose into a small pan over a medium heat, swirling the pan from time to time until the sugar liquefies and turns a lovely golden caramel colour.<\/p>\n<p style=\"text-align: center;\">7. Carefully dip the California walnut halves into the caramel, removing them individually with a spoon, and placing them on a sheet of baking parchment making sure they are separated. Leave aside to cool down.<\/p>\n<p style=\"text-align: center;\">8. To make the frosting, place the butter into a large mixing bowl and whisk with an electric whisk until white and fluffy. Add the icing sugar, cream cheese and milk and whisk until just combined.<\/p>\n<p style=\"text-align: center;\">9. Fit a piping bag with a large open nozzle and pipe a circle of icing on the top of each cupcake.
