To make the gremolata, mix together the parsley, orange zest, garlic and extra virgin olive oil, and season to taste.<\/p>\n<p style=\"text-align: center;\">2. Heat a griddle pan until searing hot, then place the cherries in cut side down. Sear for 2 minutes.<\/p>\n<p style=\"text-align: center;\">3. Lightly toast the bread until golden brown and spread each slice with the goats\u2019 cheese. Sourdough bread packed with grilled Mediterranean veggies and a lemon walnut aioli makes for a delicious meal guaranteed to satisfy lunchtime hunger pangs.<\/p>\n<p style=\"text-align: center;\">Preparation time: 25 mins<br \/>\nServes: 4<\/p>\n<p style=\"text-align: center;\">You\u2019ll need:<\/p>\n<p style=\"text-align: center;\">For the lemon walnut aioli:<br \/>\n125g California walnuts<br \/>\n2 tbsp Dijon mustard<br \/>\n2 tbsp tahini<br \/>\n2 tbsp mayonnaise<br \/>\nJuice of 1 lemon<\/p>\n<p style=\"text-align: center;\">For the sandwich:<br \/>\n1 medium courgette, sliced into 1cm rounds<br \/>\n1 small aubergine, sliced into 1cm rounds<br \/>\n1 orange pepper, sliced into strips<br \/>\n2 small tomatoes, sliced in half<br \/>\n1 onion, sliced<br \/>\n4 tbsp olive oil<br \/>\nSalt and pepper<br \/>\n8 slices sourdough bread<br \/>\n1 clove garlic<br \/>\nHandful basil leaves, shredded (optional)<\/p>\n<p style=\"text-align: center;\">Method<br \/>\n1. Dry fry the walnuts at a medium to high heat for 3 to 5 minutes, or until golden brown and toasted, stirring frequently to ensure the walnuts don\u2019t catch<br \/>\n2. Place all the ingredients for the aioli into a food processor and blitz into a chunky paste<br \/>\n3. Toss the courgette, aubergine, pepper, tomatoes, onion, half the olive oil, and salt and pepper in a large bowl to coat, then grill the veggies to your preference<br \/>\n4. Brush the bread with the remaining oil and lightly grill on both sides, then rub each slice of bread gently with the peeled garlic clove<br \/>\n5. Spoon 1 tablespoon of the lemon walnut aioli over two slices of bread, and place a quarter of the grilled vegetables between the slices. Repeat with the remaining bread and veggies<br \/>\n6.
