{"id":333196,"date":"2017-08-14T08:50:13","date_gmt":"2017-08-14T07:50:13","guid":{"rendered":"http:\/\/www.intouchrugby.com\/magazine\/?p=333196"},"modified":"2020-11-09T17:21:58","modified_gmt":"2020-11-09T17:21:58","slug":"summer-outdoors-fitness-holidays-fun-training-rugby-etc-essentials-8","status":"publish","type":"post","link":"https:\/\/www.intouchrugby.com\/magazine\/summer-outdoors-fitness-holidays-fun-training-rugby-etc-essentials-8\/","title":{"rendered":"Summer Outdoors, Fitness, Holidays, fun &#038; Training \/ Rugby etc +Essentials! 8"},"content":{"rendered":"<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\"><strong>Recipe 1: Savoury<\/strong><br \/>\n<strong> Blackberry cured cod with fennel, candy beet and blackberry remoulade<\/strong><\/p>\n<p><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2017\/07\/cid_image002_jpg@01D3048E-1.jpg\" \/><\/p>\n<p style=\"text-align: center;\">You need to use really fresh fish for this, so make sure it\u2019s not fishy at all and very clean and bright<\/p>\n<p style=\"text-align: center;\">For the cure<\/p>\n<p style=\"text-align: center;\">150g Driscoll\u2019s Sweet Blackberries<br \/>\nZest of one lemon<br \/>\n4 juniper berries, lightly crushed<br \/>\n25ml gin<br \/>\n2 tbsp sea salt<br \/>\n1 tbsp caster sugar<\/p>\n<p style=\"text-align: center;\">2 sparklingly fresh loin fillets of cod, hake or 120g each<br \/>\nKnob of butter<br \/>\nSprig of thyme<br \/>\nGarlic clove, lightly crushed<\/p>\n<p style=\"text-align: center;\">For the remoulade<\/p>\n<p style=\"text-align: center;\">80ml white wine vinegar<br \/>\n100g Driscoll\u2019s Sweet Blackberries<br \/>\nPinch of salt<br \/>\nBay leaf<br \/>\n1 candy striped beetroot, peeled and sliced very thinly (preferably with a mandolin)<br \/>\n1 granny smith or cox apple, peeled, cored and julienned<br \/>\n1\/2 bulb of fennel, sliced very finely (preferably with a mandolin)<br \/>\n1\/2 red onion, very finely sliced<br \/>\n2 tbsp soft herbs such as dill and chervil, leaves picked and roughly chopped<br \/>\n1 tbsp capers<br \/>\n2 tbsp mayonnaise<br \/>\n1 tbsp Dijon<br \/>\n1 tbsp. olive oil<br \/>\n1 tbsp toasted pumpkin seeds<\/p>\n<p style=\"text-align: center;\">Directions:<\/p>\n<p>&nbsp;<\/p>\n<p style=\"text-align: center;\">1. First cure your fish. Combine all the ingredients for the cure in the bowl of a food processor and blitz until you have a purple paste. Place the fish into a large bowl or baking tin and cover all over with the cure. Cover with cling film and refrigerate for at least 2 hours, preferably 4. While that\u2019s curing, you\u2019re going to lightly pickle the blackberries. Bring the vinegar to the boil with the salt and bay in a non-reactive pan. Add the blackberries and set aside<\/p>\n<p style=\"text-align: center;\">2. When the fish has cured, rinse it gently under a softly running tap and dry with kitchen roll. Leave on the kitchen roll to dry while you make the remoulade<\/p>\n<p style=\"text-align: center;\">3. To do this, combine the sliced ingredients in a bowl and season with salt and pepper. Mix the mayonnaise, Dijon mustard, olive oil together along with 1 tbsp of the blackberry vinegar (from pickling the blackberries), and use it to dress the remoulade. Add the capers, pumpkin seeds and soft herbs and combine until everything is lightly and evenly coated. Drain and add the blackberries, reserving the blackberry-infused vinegar for other occasions (lovely dressing for salad mixed with olive oil)<\/p>\n<p style=\"text-align: center;\">4. Heat a large, heavy-bottomed non-stick frying pan or cast iron skillet over a medium-to-high heat with 1 tbsp. of olive oil and knob of butter, garlic and thyme. Place the fish in the pan and cook, without moving it (you want it to create a self-sealing crust) for three or so minutes, baste with the melted butter. When it comes away from the pan naturally, flip it over and finish for a couple more minutes, continuing to baste it. Once just cooked through, divide the fish between plates with the remoulade. I like to season the fish with a little more of the vinegar (as you would lemon juice).<br \/>\n5. Garnish with more fresh herbs.<\/p>\n<p style=\"text-align: center;\"><strong>Recipe 2: Savoury<\/strong><br \/>\n<strong> Spelt base pizza with blackberries, gorgonzola, kale and walnuts<\/strong><\/p>\n<p><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2017\/07\/cid_image001_jpg@01D3048E.jpg\" \/><\/p>\n<p style=\"text-align: center;\">Serves 2-4<\/p>\n<p style=\"text-align: center;\">For the Biga<\/p>\n<p style=\"text-align: center;\">75g spelt flour<br \/>\n75g plain white flour<br \/>\n1\/2 tsp fast action yeast<br \/>\n1\/2 tsp sugar<\/p>\n<p style=\"text-align: center;\">For the final dough<\/p>\n<p style=\"text-align: center;\">150g spelt flour<br \/>\n125g wholemeal flour<br \/>\n1 tsp fast action yeast<br \/>\n2 tbsp olive oil<\/p>\n<p style=\"text-align: center;\">For the topping<\/p>\n<p style=\"text-align: center;\">50g Driscoll\u2019s Sweet Blackberries<br \/>\n1 garlic clove, crushed<br \/>\n75g cr\u00e8me fraiche<br \/>\n50g soft gorgonzola, plus extra for crumbling over<br \/>\n1\/2 red onion, sliced<br \/>\n2 tbsp extra virgin olive oil<br \/>\na handful of walnuts<br \/>\n100g kale or chicory &#8211; I like to use the frilly green and purple, stems removed<br \/>\n2 sprigs of thyme, leaves picked<\/p>\n<p>https:\/\/www.youtube.com\/watch?v=GJlMOp_V4OY&#038;feature=youtu.be<\/p>\n<p style=\"text-align: center;\">Directions:<\/p>\n<p style=\"text-align: center;\">1. Make the biga the night before. In a bowl, combine the two flours, yeast and sugar. Slowly add 150ml lukewarm water, stirring to create a thick batter-like dough. Cover with a plastic carrier bag or dry tea towel and leave in a warm place overnight<\/p>\n<p style=\"text-align: center;\">2. For the second stage, add the flours, yeast and olive oil along with 1 tsp salt to the biga, then gradually mix in enough water to make a soft wet dough that still holds its shape (we used around 200ml-220ml water). Cover and leave to rise for 2-4 hours or until tripled in size, being careful that it doesn\u2019t over prove and collapse on itself<\/p>\n<p style=\"text-align: center;\">3. Once the dough has risen, knock it back in the bowl then tip out onto a heavily floured surface. Knead in the flour until the dough stops sticking to your hands, it should be very soft and springy but not so wet that it sticks to the surface. Divide into 2 balls (freeze one to use later) use the other to make either 2 small or one large pizza rolled out with a floured rolling pin to approx. 1 cm thick. Heat the oven to 210C\/190C fan\/gas mark 6 1\/2. Transfer the base to an oiled baking sheet. Prove this for a further five minutes while you get the topping ready<\/p>\n<p style=\"text-align: center;\">4. Beat the cr\u00e8me fraiche, garlic and gorgonzola together to make the base. Spread it across the pizza dough. Toss the kale and red onion in a bowl with olive oil, salt and pepper. Add this to the top of the pizza base along with the blackberries, extra gorgonzola and walnuts, drizzle with olive oil and season with thyme. Bake for 10-15 mins, until the base is puffed and golden.<\/p>\n<p style=\"text-align: center;\"><strong>Recipe 3: Sweet<\/strong><br \/>\n<strong> Blackberry and bay clafoutis<\/strong><\/p>\n<p><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2017\/07\/cid_image003_jpg@01D3048E.jpg\" \/><\/p>\n<p style=\"text-align: center;\">250ml whole milk<br \/>\n4 bay leaves<br \/>\n400g Driscoll\u2019s Sweet Blackberries<br \/>\n3 tbsp cr\u00e8me de mur<br \/>\n2 tsp caster sugar<br \/>\n100g caster sugar<br \/>\n100g white flour<br \/>\n2 tbsp demerara sugar<br \/>\npinch of salt<br \/>\n2 eggs, beaten<br \/>\n50g butter, melted<\/p>\n<p style=\"text-align: center;\">https:\/\/www.youtube.com\/watch?v=XLkGBJowhgE&#038;feature=youtu.be<\/p>\n<p style=\"text-align: center;\">Directions:<\/p>\n<p style=\"text-align: center;\">1. Place the blackberries in a bowl with the cr\u00e8me de mur and two tsps of caster sugar. Macerate while you infuse the milk. Place the milk, half the caster sugar and bay in a pan over a medium heat and bring to the boil, stirring until the sugar has dissolved. Boil for about two minutes, stirring, and then turn the heat off and leave to infuse for at least an hour. Remove the bay leaves<br \/>\n2. Preheat the oven to 180C and grease a baking dish just wide enough to hold the blackberries in one layer. Scatter over the demerara sugar and rotate to distribute the sugar evenly across the dish<br \/>\n3. Sift the flour into a bowl with the salt and sugar. Add in the eggs, beating until smooth, then mix in the melted butter. Gradually add the milk, whisking until you have no lumps, straining through a sieve if you\u2019re not happy there are no lumps. Put the blackberries in the dish and gently pour over the batter. Bake for 30 minutes, until golden and just set but still wobbly. Leave to settle for 10-15 minutes then serve, warm.<\/p>\n<p style=\"text-align: center;\"><strong>Recipe 4: Sweet<\/strong><br \/>\n<strong> Blackberry caramel blondies<\/strong><\/p>\n<p><img decoding=\"async\" class=\"aligncenter\" src=\"http:\/\/www.intouchrugby.com\/magazine\/wp-content\/uploads\/2017\/07\/cid_image004_jpg@01D3048E.jpg\" \/><\/p>\n<p style=\"text-align: center;\">Makes 12 pieces<\/p>\n<p style=\"text-align: center;\">For the blackberry caramel<\/p>\n<p style=\"text-align: center;\">100g Driscoll\u2019s Sweet Blackberries<br \/>\n100g light muscovado sugar<br \/>\n100g creme fraiche<br \/>\n30g butter<br \/>\nA large pinch of sea salt<\/p>\n<p style=\"text-align: center;\">For the blondie mix<\/p>\n<p style=\"text-align: center;\">100g unsalted butter, melted<br \/>\n200g light muscovado sugar<br \/>\n1 large egg<br \/>\n1tsp vanilla extract<br \/>\n1\/4 tsp salt<br \/>\n120g all-purpose organic flour<br \/>\n60g flaked almonds<\/p>\n<p style=\"text-align: center;\">100g blackberries, for garnishing<br \/>\nhttps:\/\/www.youtube.com\/watch?v=QYiLRAs8FZs&#038;feature=youtu.be<br \/>\nDirections:<br \/>\n1. Preheat the oven to 180 degrees C. Line a high sided, 18cm x 25cm high sided metal baking tin with greaseproof baking paper<br \/>\n2. To make the blackberry caramel, put the blackberries in a non-stick, non-reactive pan and heat over a medium to high heat with two tablespoons of water and a pinch of salt. Cook for a few minutes, until the blackberries change colour and start to release their liquid and become squishy. Remove to a bowl and squash with the back of a fork. Wipe out the pan and melt the sugar slowly. Add the butter and cr\u00e8me fraiche and cook for 3-5 minutes, until you have a smooth caramel sauce. Add in the blackberries and their juice and cook, stirring into the caramel. You should have a lovely, slightly purple fruity caramel. Season with salt to balance and bring out the flavours<br \/>\n3. To make the blondies, in a medium bowl, stir melted butter and brown sugar until smooth. Add the egg, vanilla, salt and stir vigorously until smooth. Add the flour and half the almonds and stir until no streaks remain. Spread half the batter across the baking tin, top with the blackberry caramel, spreading it out as evenly as you can. Top with the rest of the batter and spread out over the caramel, using a toothpick to marble. Press in the remaining blackberries and scatter over the flaked almonds. Bake for 20 to 25 minutes until a toothpick inserted into the middle comes out relatively clean. scheduling their wedding day on match day<\/h3>\n<p>Power management company, Eaton, reveals the lengths fans will go to in order to watch their team, with 39% of Brits admitting they would only miss a match on TV if a power cut forced them to<\/p>\n<p>London, UK, 10 August 2017 \u2013 Almost half (41%) of British football fans wouldn\u2019t schedule their wedding day on a match day, reveals power management company Eaton, and a third (35%) would prioritise catching the game over going on holiday.<\/p>\n<p>The results from the survey of 2,000 football fans \u2013 commissioned by Eaton to celebrate its partnership with Manchester City Football Club \u2013 demonstrates the loyalty fans feel to their football team and how much of a priority keeping up-to-date with it is to their lives.<\/p>\n<p>In fact, over a third (39%) admit the only reason they would miss a football match on TV would be due to a power cut giving them no choice in the matter. The unfortunate reality is that sometimes these loyal fans don\u2019t get a choice \u2013 one in 10 fans reported that a power cut, affecting their home and surrounding area, has led to them missing a match. Eaton has developed xStorage Home, which is available for pre-order now, to provide homes with electrical energy in the event of power cuts \u2013 powering lights and even a TV and broadband router to retain power if needed.<\/p>\n<p>Pedro de la Horra Calomarde, Segment Manager Residential Buildings EMEA, from Eaton responded to the research:<\/p>\n<p>\u201cIt\u2019s surprising to learn how many fans have missed a game due to power cuts. We partnered with Manchester City to share best practice on how the use of power management solutions highlight the benefits of improved quality of life and to the environment. By developing battery storage solutions, such as xStorage Home, we\u2019re making sure people have a reliable power supply and that there\u2019s back-up in place to avoid outage and mean no one ever misses a match due to power cuts.\u201d<\/p>\n<p>Almost a third (30%) of the fans surveyed said they would pay \u00a3100 or more to avoid missing a match. Millennials proved to be the most eager to cough up the cash to overcome any issues preventing them from tuning in, with 80% saying they would pay to ensure they could watch their team play.<\/p>\n<p>One fan who has gone above and beyond to catch every game is City fan, Sean Riley. Sean, 51 years old from Manchester, has missed just one City match in 28 years, including away games. Sean said: \u201cI started going to matches with my dad in 1974 and have been an ardent City supporter ever since,\u201d says Sean. \u201cFor the past 28 years, I have been very fortunate and privileged to attend every competitive game played by the club, at home, away, and in Europe. The single exception was the CSKA game in Moscow in 2014 which was officially played behind closed doors so no one could attend\u201d. He continues: \u201cMy wife is also a committed fan of the Club, so naturally, we got married outside of the football season, to ensure our big day didn\u2019t clash with any of the fixtures!\u201d<\/p>\n<p>Most fans (72%) put their devotion down to a love for their team and wanting to be with them every step of the way. A quarter (24%) said it\u2019s because they want to be a part of the post-match analysis and 18% admitted they like to know the results because they have a Fantasy Football team.<\/p>\n<p>Martha Newson, cognitive anthropologist at University of Oxford, commented:<\/p>\n<p>\u201cTypically, our families are the people we experience life\u2019s highs and lows with \u2013 and are the people we are most likely to sacrifice ourselves for. In some ways, football clubs and other such groups evoke, and even manage to exaggerate, our evolved tendency for this kin psychology so that we treat other group members like our closest kin. For some football fans, the ritual of the game becomes more important than our most cherished family rituals, like birthday parties and weddings.\u201d<\/p>\n<p>In May 2017, Eaton became Manchester City\u2019s new Official Home Energy Storage Partner in the UK.
